Now having a (much) larger kitchen, I've taken it upon myself to become somewhat of a baker. I cook but not very well and to be frank, I just don't enjoy it all that much. My husband is better at it than I am and more times than not when cooking he chimes in with fun ingredients to add to jazz our meal up a bit. I just don't have the cooking sense to pair spices with certain foods like he does. I gotta give it to him- he's good.
So back to baking. I love the way my house smells when baking, and now that i've got all the good bake wear i'm all about being the wife who makes the best muffins or the one who brings the best treats to the dinner parties. I started out with this super simple, super delicious recipe from my momma. When I say simple and delicious, really- simple and delicious. MINI CHEESECAKES.
12 vanilla wafers
2, 8 ounce pack cream cheese
1/2 cup sugar
1 teaspoon vanilla
soften cream cheese and add all ingredients together in mixing bowl. mix ingredients together. put cupcake foils in muffin tin and place 1 wafer in each place. pour mixture over each wafer filling each just over half way (they rise a bit). bake at 325 for 25 minutes. spoon a cherry pie filing, or apple filing on top and walah! yummmtown galore!
